I'm trying to eat better/healthier and thus trying to cook more. I also need to be a better user of food. I'm famous for pitching absolutely good leftovers just because. So today while cleaning out the fridge once again I came across some jasmine rice that was cooked over the weekend. Going back to the healthier thing, rice pudding was out of the question. To the wonderful internet I went and came across an interesting recipe for using leftover rice - Galettes de Riz from the Chocolate & Zucchini website.
I couldn't find any information on the site regarding reprinting recipes so for now I will err on the side of caution and not (click the link above to be directed to the recipe on the C&Z site). But I will tell you how I fixed them and I do have photos.
I didn't have any diced tomatoes which the recipe calls for (okay I did, but the expiration date on the can was 2006 - go figure). I instead used a dusty, but still good, jar of roasted red bell peppers. Since the peppers were in oil, I just added the patties directly to the pan. They only took about 5 minutes on each side. I don't really like cilantro and thus didn't have any but used some flat leaf parsley. I also added a sprinkling of 2% mozzarella cheese. These turned out to be the most delicious things I've had in some time! Very quick and very easy. I can't wait until the next time we have rice...maybe take it a bit Mexican next time...
